100yr old Assyrtiko vines struggle on the slopes of Santorini to produce the fruit that makes just 2400 bottles of this intense, sophisticated and tasty AF skin contact wine. Very natural in it's winemaking and vineyard practices (they're currently converting to organics) the juice sees 14 days of skin contact, 10 months lees (yeast) ageing, no fining or filtration and no other additions other than a tiny (40mg/l) amount of sulfur.
Santorini makes smoky high end mineral wines, and this is along the same vein but turned up to 11 to produce a structured and generous wine. The mouthfeel has pretty firm tannins but it's balanced by the richness with a little salinity and spice on the end. Go on, treat yourself.
