Cahors is often a forgotten about appellation, treated as the ugly brother of Bordeaux to it's North West, it doesn't get much love.
They usually use Malbec (Cot, around these parts) to create punchy and usually rustic reds to go with a local beef stew.
This is a lovely meld of tradition and modernism - it has all the weight and power of a traditional Cahors, but a judicious use of oak softens the tannins into a chocolatey coffee like grip with some exotic spices like star anise and allspice.
