Domaine Macle has long been famed for making some of the best oxidative wines in the Jura. They sell more than 97% of their Chateau Chalon bottling to loyal private customers, so this is one of those "if you know you know" domaines.
Even their Côtes du Jura will comfortably age for 30 years!
Laurent produces just a few barrels of this topped-up - ouillé (less oxidative) - chardonnay. It has such power and structure that he ages it for an extended 3 years for it to settle down and become more limber. The grapes are gorwn in the Château-Chalon appellation in limestone-clay soil.
This is super rich, but balanced and restrained compared to Jura aged sous voile. Big on the stewed lemons and almond flavours with mental concentration and a vanilla and cinnamon lick to the end.
