Vin Jaune is the yellow wine that the Jura was originally famous for before it became the darling of natural wine. Savagnin is the grape that's aged in barrel for around 7 years without topping up, meaning for every litre, enough juice evaporates through the barrel to leave just 620ml - hence the bottle size!
This is aged in 10 to 20yr old 228ltr barrels, stored on the first floor of Pauline and Géraud’s house with windows opened to the elements throughout the year, it was bottled after almost 7 years sous voile (under a cap of flor).
Vin Jaune is known for absolute power, but this is an elegant, drinker friendly example. Lots of fruitiness on the nose, it's not purely taken over by the nuttyness that comes from the oxidation in barrel, you're able to this is its youth, but obviously it's going to age wonderfully.
