Old ungrafted vines in the volcanically soiled Taganana area in Tenerife create this complex, savoury, nutty and smoky drop.
A mix of indigenous grapes such as listan blanco, marmajuelo and malvasia among many, a fermented in 500l barrels, aged on the lees for 11 months and roughly a quarter of the juice sits on skins for 8 days. This means complex layering of flavour, herbs and minerality from the skins but not enough to overpower the terroir of the wine.
Really high quality stuff this, definitely a future classic.
