Short for Col Fondo, the Italian expression for 'Ancestral method', or Pet Nat.
This is a blend of the Champagne grapes, Pinot Noir, Chardonnay and Pinot Meunier (and a little auxerrois for good measure). Fermented in a combination of qvevri and stainless steel by one of England's most forward thinking winemakers - Ben Walgate.
Cloudy, zippy, crunchy apples and a creamy saline tang. At 9% alcohol this can go down a little too fast!
