Around an even blend of Bacchus and Pinot Blanc are fermented separately for 6 months in clay qvevri (big terracotta eggs imported from Georgia, and buried in the ground).
After blending the wine was aged for a further couple of months in oak foudre before being bottled unfined and unfiltered.
This has a lot of smoky chalkiness that the qvevri brings, with a lick of unripe tropical fruit flavours brought about from the Sussex sunshine.
